Fruity Yogurt Smoothie

Ingredients

  • 1c milk
  • 1c fresh or frozen fruit: strawberries, peaches, or blueberries
  • 1c yogurt
  • 1 banana, sliced three times
  • 1c milk

Instructions

Put all ingredients into a blender and frappe. If you like it a little thinner and cold, add a couple of ice cubes before blending.

Makes two tall glasses or three short glasses of smoothie, perfect for breakfast, a snack, or a cool-off on hot days.

Notes

Also a good way to introduce Baby to fruits, once they start sipping through straws (might have to thin it out some with milk, first).

You can use just about any fruit you like, provided they don’t have seeds that will make the smoothie bitter when they’re cut up. Kiwis and raspberries both have bitter seeds, for instance. I listed my favorites above.

I use the 1/2 banana as a sweetener. If you’re out of bananas or don’t like them you can subsitute a dollop or two of maple syrup or honey. (Don’t feed honey to children under one year.)

Leftover Veggie Salad

  • Fresh vegetables for crunch, such as chopped celery, sprouts, shredded or chopped carrots or radishes, sliced green onions
  • Leftover veggies like broccoli, cauliflower, carrots, chunks of potato, green beans–as long as they're not overdone
  • Vinaigrette, either <a href="http://www.thenewhomemaker.com/favoritevinaigrette">homemade </a> or store-bought
  • Fresh vegetables for crunch, such as chopped celery, sprouts, shredded or chopped carrots or radishes, sliced green onions

Instructions

Cut all the veggies to bite-sized pieces. Combine in a bowl. Pour a little vinaigrette over the top, mix to coat, taste. Season with salt and pepper, add a little more vinaigrette if you didn’t get everything gently-coated. Stick it in the fridge for at least an hour for the flavors to marry. Yummy and nearly “free.” Smiling

Notes

A good use for crisply cooked leftover veggies of all kinds. Save even a few pieces for salad–it’ll add up in a couple of days!

  • 12 soft oatmeal cookies
  • 1can any flavor prepared pie filling
  • 12 soft oatmeal cookies

Instructions

Crumble 8 cookies in the bottom of large,shallow micro. container. Pat firmly into pan with spatula.

Pour pie filling on top & spread evenly. Crumble 4 remaining coolkies on top of filling.

Seal container, open vent, or place lid loosely on top & microwave on high for 8-10 minutes or until heated through.

Top with Vanilla ice cream & serve while warm!

Mesclun, Fruit and Castello Cheese Salad

  • One bag mesclun salad mix
  • One ripe fresh pear
  • One fresh ruby red grapefruit, or water-canned citrus segments such as mandarin orange
  • 2oz (a good sized chunk) Blue Castello cheese or other mellow, flavorful softer blue cheese
  • 1c raw pecans
  • Optional but good: Sweet red or Vidalia-style onions, cut in slices and divided into rings; dried cranberries; fresh avocado ch
  • One bag mesclun salad mix
  • One ripe fresh pear
  • One fresh ruby red grapefruit, or water-canned citrus segments such as mandarin orange

Instructions

Toast the pecans in a dry skillet until they start to emit a wonderful fragrance that makes you want to eat them on the spot. Resist, take them off the heat and chop them roughly instead. OK, eat one or two but don’t get carried away.

Core the pear and cut into bite-sized chunks. Cut the peel off the grapefruit and cut into segments, avoiding the white dividing membranes.

Empty the mesclun salad mix into a large bowl. Add the other ingredients and dress with JJ’s Favorite Vinaigrette, but not too much. Toss well. Eat immediately; does not keep well.

Big Skillet Cheeseburger

  • 1 egg, beaten
  • 1lb lean ground beef
  • 1 to 2 Tablespoons Onion Soup Mix
  • slice cheese
  • 1t pepper
  • 1 egg, beaten
  • 1lb lean ground beef
  • 1 to 2 Tablespoons Onion Soup Mix
  • slice cheese
  • 1t pepper

Instructions

Mix together egg, ground beef, and soup mix (I do it in the KitchenAid).

Lightly pat 1/2 of meat into an 8-inch oven proof skillet.

Arrange cheese slices over meat and top with remaining , patting to make a smooth surface.

Sprinkle with pepper and cut into quarters.

Cook over medium to medium-high heat until bottom layer is nicely browned.

Put skillet in oven and broil until top is browned and burger is cooked all the way through.

Serve right away.

Notes

A very quick, really yummy cheeseburger to make indoors in the winter when it’s too cold to grill. Everyone really liked this and it really hits the spot when we’re all so ready for warm weather to arrive and for grilling season to begin!

I use this Homemade Onion Soup Mix recipe in the burger mixture. I also don’t have an oven proof skillet, so I used a regular stovetop skillet for the first part of the cooking and slid the whole thing into a casserole dish for the broiling part.

You can make it a little fancier by sauteing 1/4 cup minced onion and a couple minced garlic cloves and adding it to the ground beef with the rest of the ingredients. For a larger family doubling the ingredients and using a larger skillet would probably work just fine.

Baguki Beef

  • 1c soy sauce
  • 6T of sugar
  • 4T of Oil(olive or whatever)
  • whole bunch of green onions chopped up!
  • 1T pepper
  • garlic ( I use the chopped stuff in a jar, about a forkfull)

Instructions

Mix all together-microwave for 30 secs to help dissolve the sugar.

Add beef: I use top sirloin, sliced thin. Chicken sliced is awesome too…as is wings. I usually marinate two days before I am going to cook, but 3-4 hours with the beef is still yummy.

There are many ways to cook–stir fry, for a moister beef. BBQ, for mouth watering goodness, or broil(my fav) for moist, mouth watering goodness!

Really great over white rice!
