Sticky Sushi Rice

Sticky Sushi Rice

Ingredients (use vegan versions):

 Â   3 cups short-grain sushi rice* (uncooked)
 Â   1/3 cup brown rice vinegar
 Â   2 tablespoons sugar
 Â   1 teaspoon salt
 Â   2-3 teaspoons dried wakame* (opt)
 Â   3 cups water

Directions:

Put the rice into a large mixing bowl. Add water to about an inch from the top of the bowl, mixing the rice with your hand as the water goes in. Drain of the rice carefully. Repeat this until the water is clear. Drain a final time.

Let the rice sit for 20 minutes.

Place in a saucepan and add 3 cups of water and the wakame (if using).  Let sit for 5 minutes.  Bring to a boil, turn down to simmer and cover. Cook for ten minutes. Check if the rice is done by using a rice p…

  • 2 1⁄2lb beef brisket "flat" (thinner end of brisket cut from the large thicker end; you can purchase them in your supermark
  • 1lb bulk breakfast sausage
  • Head Country All Purpose Championship Seasoning (a dry rub barbeque seasoning)
  • 2 small potatoes sliced
  • 1 small onion sliced
  • Oil for sauteeing
  • Head Country BBQ Sauce

  • Oil for sauteeing
  • Head Country BBQ Sauce

Instructions

Rub the Head Country seasoning on the brisket, both sides. Season the 1/2 pound of sausage with 2 tsp. Head Country seasoning.

With a very sharp knife, cut a “pocket” in the brisket large enough to hold sausage, potato & onion. (My ingredients were bulging out.) In the pocket place the raw seasoned sausage, raw potato and raw onion. Wrap twine around the brisket to keep the ingredients from falling out of the pocket.

Place brisket in hot pan with enough oil to brown the meat on both sides. Remove the meat from hot pan and brush the entire piece of meat (both sides) with Head Country BBQ sauce.

Place brisket in roaster (with fat side of meat down). Bake in pre-heated 350-degree oven approximately 3 hours (or until tender), basting with BBQ sauce once or twice.

From Chef Dale Hamilton, Head Country, Ponca City. Head Country is a BBQ establishment in Ponca City, OK which sells the sauce and rubs regionally. This recipe was listed on a Tulsa news channel website. It is delicious! Do not omit the dry bbq seasoning, it makes the dish!

Easy Empanadas

Ingredients (use vegan versions):

    1 link soyrizo vegan Mexican sausage
    1/4 red or white onion, diced
    1/2 bell pepper, diced
    1/2 jalapeno, diced
    olive oil, for sautéing
    1 box refrigerated pie crust

Directions:

Preheat oven to 375.

In pan, sauté Soyrizo, onion, bell pepper, and jalapeno in olive oil until onions and peppers are cooked, about 5-7 minutes.

While it cools, unroll both sheets of pie crust and use a large round cookie cutter or a large drinking glass to cut circles from crust.  Fill each circle with about a tablespoon of the Soyrizo mixture, folding in half each empanada and sealing seam with a fork.

Ingredients (use vegan versions):

    1 small can of bamboo shoots in water
    2 pieces of thinly sliced fried tofu
    pickled ginger
    3 cups of short grain Japanese rice
    1 piece of kombu
    4 tablespoons vinegar
    1 tablespoon sugar
    1 tablespoon salt
    4 or 5 pieces of nori seaweed paper

Directions:

1) Cook the rice according to directions of the bag.  Put the kombu into the water with the cooking rice to flavor it.

2) Cut the bamboo sprouts and fried tofu slices into small strips.

3) When rice is done cooking, put it in a big bowl and cool it by mixing it and fanning it with a fan or magazine.

Vegetable Tempura

Ingredients (use vegan versions):

    1 cup cold water
    1 cup unbleached all purpose flour
    2 tablespoons egg substitute (I use Ener-G brand)
    1 tablespoon salt
    vegetables of your choice; carrots, snow peas, green beans, daikon, cabbage, shiitake, bamboo shoots, lotus root, onions, sweet potatoes, etc work well)

Directions:

1) Mix the egg replacer and salt into the cold water.  It is important to have to water cold because then the batter wont absorb as much oil and wont be gooey.

2) Mix the flour into the water and egg replacer until it is smooth and there are no lumps. Place the batter in the freezer to keep it cold.

    Vegemince or other burger-style crumbles
    2 tins/cans Italian plum tomatoes in juice
    1 large onion
    1 clove of garlic
    1 small tin/can of cooked kidney beans
    cayenne pepper
    chili powder
    1-2 teaspoon Marmite or other yeast extract
    sugar (to taste)
    salt and pepper (to taste)
    olive or sunflower oil

1.  Destalk the tomatoes and chop finely. Do not discard the juice.
