Stuffed Brinjals

Ingredients (use vegan versions):

    (yennai katrika in tamil/gutti vankai in telugu)
    ——–
    500 gms brinjals
    5 onions
    10 cloves garlic
    10green chillies
    1/2 cup coriander leaves
    1/2 cup grated coconut (fresh or dried)
    2 inch piece ginger
    1 teaspoon sesame seeds
    1 small lemon-sized tamarind ball
    1 teaspoon garam masala
    1/2 teaspoon turmeric
    salt- to taste
    1/2 cup oil
    1/2 teaspoon mustard seeds

Directions:

Brinjals in Gravy (Katrika Koot-Kuzhambu)

Ingredients (use vegan versions):

    3 teaspoons bengal gram
    3 1/2 teaspoons split horse beans
    2 1/2 teaspoons coriander seeds
    6 dry red chillies
    1/2 teaspoon mustard seeds
    one tamarind, medium lemon-sized ball
    500gms brinjals
    1 tablespoon grated coconut (fresh or dry)
    1 teaspoon groundnut oil
    salt to taste
    1/2 teaspoon turmeric
    1/2 teaspoon asafetida
    1 1/2 teaspoons pulses

Ingredients

  • 3c water
  • 1T butter
  • 1t vanilla
  • 1c sugar
  • 2T baking cocoa
  • 1T flour
  • 3c water
  • 1T butter
  • 1t vanilla

  • 1T flour

Instructions

Combine sugar, cocoa and flour in a bowl and set a side. Heat water, butter and vanilla in a medium saucepan until boiling. Remove from heat and whisk in remaining ingredients. If you would like the gravy to be thicker, return to a heat and stir to desired consistency.

Notes

My family loves this on sour cream pancakes. It can be served on biscuits as well. You can also keep on the thin side and serve as a chocolate dessert sauce. It’s great!

    5 green chilies- (or to taste)
    2 teaspoons finely chopped coriander leaves
    2 1/2 teaspoons mustard seeds
    2 teaspoons fenugreek seeds
    salt to taste
    1 tablespoon oil
    1/2 teaspoon asafetida
    1/2 teaspoon turmeric
    1 1/2 teaspoons red chilly powder- (or to taste)

    1 package firm tofu
    oil
    1 cup shredded carrots
    1 cup shredded or chopped cabbage
    2 cups sliced Mushrooms
    1 cup sliced green onions
    1-2 sliced bell peppers
    1 tablespoon minced garlic
    1 tablespoon minced ginger
    2 tablespoons soy sauce
    Hoisin sauce (check ingredients)
