Ingredients (use vegan versions):

    2 cups cornmeal (I usually go with fine or medium ground)
    1 teaspoon salt
    1/4 teaspoon pepper
    1 teaspoon garlic powder
    1 teaspoon baking powder
    1 cup shredded vegan cheese (optional)
    1 cup sweet organic corn (optional)

Directions:

In a mixing bowl, add cornmeal, salt, pepper, baking powder. Mix well.

Add the cheese at this time if you’re going to use it and mix well.

With a spoon, stir ingredients while adding about a 1/2 cup of boiling water at a time ( 2 1/2 cups maximum) to control how much liquid you introduce into the mix.  Some brands of cornmeal need more or less …

Pepper Gravy (Mozhugu Kulumbu)

Ingredients (use vegan versions):

    2 teaspoons pulses
    2 teaspoons split horse beans
    2 teaspoons black pepper (or to taste)
    6 red chilies (or to taste)
    1 teaspoon grated coconut (dry)
    2 pinches Asafetida
    about 15 leaves curry leaves
    salt - to taste
    a small lemon sized ball tamarind
    1/2 teaspoon turmeric
    1/2 teaspoon rice

Directions:

Grind slight coarsely all the ingredients except tamarind to make a thick paste.

Then squeeze tamarind in water and make up to 2 glasses of the tamarind water, and throw away the residual tamarind. Then heat it and add the above coarsely gro…

Sarsa Criolla (Peruvian Onion Relish)

Ingredients (use vegan versions):

    1 mild red onion, cut into “feathers” (lengthwise, paper-thin half moons)
    1 mild hot pepper (aji amarillo, red jalapeno, jalapeno, etc.) (optional!)
    generous pinch of salt
    juice of 1-2 limes
    1/2 teaspoon corn oil (optional!)
    1 tablespoon minced cilantro (optional!)

Directions:

Slice the onion “a la pluma”– into paper-thin half-moons, cutting the onion top-to-bottom.  This is best if the onion is mild.  If using hot pepper, cut it into the finest possible slices– the shape doesn’t matter so long as it’s not an eyesore, and you can even mince it if y…

Ingredients (use vegan versions):

    1 cup corn oil (for frying–most of this won’t be consumed!)
    1 pound potatoes, peeled and cut into French-fry-sized pieces
    12-14 ounces steak substitute– Morningstar beef-like strips, seitan, or large textured
    soy protein chunks rehydrated in broth
    1 large onion, cut into strips like the French fries (red is nice)
    1 large ripe tomato, sliced into rounds, then halved into half-moons
    3/4 to 1 teaspoon salt (Peruvian food is usually very salty, so use your own taste to
    guide)
    1/4 teaspoon black pepper
    1/2 teaspoon dried oregano
