Roasted New Potatoes with Caramelized Onions and Truffle Oil

Perfume makers should give up on chasing pheromones and start trying to mimic the scent of truffles instead, the aroma is so irresistible. Have you ever used truffle oil in your cooking? I think I have a new best friend in the kitchen. I don’t want roasted potatoes any other way than tossed with a bit of truffle oil. Yes it is expensive, $12 or more for a little 3 ounce bottle. (Found my bottle at Whole Foods.) But you don’t need much; the amount of truffle oil required for this recipe will cost you anywhere from 25 to 50 cents. Small price to pay to see everyone’s eyes light up with delight as they take their first bite. Truffle oil is especially good with potatoes as the starchy potatoes just soak up the truffle flavor from the oil. These are just basic roasted new potatoes and onions, easy to make, hard to mess up, but they taste out of this world with a few drops of truffle oil.

Curried Spinach with Tofu Paneer

Ingredients (use vegan versions):

    2 Tablespoons nutritional yeast
    1/2 teaspoon onion powder
    1/2 teaspoon salt
    1/2 teaspoon vegan parmesan (optional)
    2 Tablespoons water
    1/2 teaspoon spicy brown mustard
    1/4 block of extra-firm tofu, drained and cubed (total drainage isn’t necessary since the cubes should be soft when cooked)
    1/2 Tablespoon curry powder
    3-4 cups baby spinach (approx - I used about three big handfuls)
    veggie oil

Description

I make them the day before and set them in a glass cake stand. Everyone sees them and they disappear like magic. The secret is to keep the batch small so they’re fresh for your snackers.

Ingredients

  • 2c rice krispies
  • 1c reese cereal or nesquik or cocopuffs
  • 20 big marshmallows
  • 1⁄8c margarine
  • 1t vanilla

Instructions

Put margarine in a large saucepan and melt over low heat. Add your marshmallows. Melt, remembering to stir occasionally. Have cereal ready in a dish. Once the marshmallows are melted add the vanilla and stir. Add the cereal, stir rapidly and put in a greased 8×8 pan. A spatula is handy for scraping the pot. Work quickly. Put margarine on your fingers (which you have hopefully washed) and spread the krispies evenly in the pan. Push down gently. If you push too hard you’ll get hard krispies. Hand out as breakfast on the run.

Ingredients (use vegan versions):

    1 cup grated cabbage
    1/2 cup grated cauliflower
    1 finely grated carrot
    1 Tablespoon grated onion
    1 Tablespoon soy sauce
    1/4 teaspoon salt
    1/4 teaspoon chili powder
    5 Tablespoons flour
    2-3 Tablespoons olive oil
    1 Tablespoon ginger, garlic, chili powder, coriander each
    1 cup water or veggie broth
    2 Tablespoons soy sauce
    1/4 teaspoon salt, sugar, pepper each
    3 Tablespoons corn flour, water to mix with

Avocado Salad with Heirloom Tomatoes

Mark Bittman of the New York Times recently did a write up of simple meals ready in 10 minutes or less. This avocado tomato salad would be my entry, but in five minutes or less, and that would include picking the chives and tomato from the garden.

All one really needs to dress an avocado is a little bit of lemon juice. No need for oil, there’s enough of it in the avocado. If you’re in a real hurry, just remove the pit from one half of an avocado still in its skin, squeeze in some lemon juice, and eat it up with a spoon. But with this beautiful heirloom tomato just looking for an excuse to be eaten, it takes all of one minute more to slice and arrange both. Fleur de sel sea salt is lovely on the tomatoes and avocado. Balsamic works as well, but lemon juice does a better job at accenting the simple flavor of the avocado.

Ingredients (use vegan versions):

    3 cups whole wheat flour
    2 teaspoons baking soda
    1/4 cup cocoa
    2 tablespoons oil
    1/4 teaspoon salt

Peanut satay marinade recipe

Who says marinade recipes need to be complicated? This 3 ingredient wonder makes for an easy satay sauce that’s nice as marinade for chicken kebabs or breasts, or as a dipping sauce for parties.



3 ingredients

  • 1/4 cup of crunchy peanut butter
  • 1 tin of coconut milk/cream
  • 1/2 an onion, chopped very fine


Start by sauteeing the onions on a non-stick pan. I try to avoid adding additional oil as the peanut butter has plenty of oil. Add the peanut butter and coat the onions for a minute or so.

Then, slowly add the coconut milk to the pan, stirring constantly. The sauce will thicken up, and after a few minutes you are all done.


The sauce will thicken as it cools, so you can get away with a reasonably runny mixture, especially when you are making a dipping sauce.
