Yia-Yia’s Green Beans

Ingredients (use vegan versions):

    2 onions, sliced
    1 lb. fresh or frozen green beans
    1 28 oz. can of petite diced tomatoes
    1 1/2 tablespoon dried parsley
    2 teaspoons salt
    1/2 teaspoon or more of pepper
    1/2 cup extra virgin olive oil
    1 cup water

Directions:

Slice onions, and place in a large pot.  Dump green beans on top of that.
Dump all seasonings on top.
Pour on olive oil.
Pour on water.
Do not stir.
Place your pot on medium fire for 45 min. Covered.

Stir all together, cook for another 30 min. or until green beans are all yummy and tender.

Persimmon Pomegranate Fruit Salad

Based on a tip in Alice Waters’ new cookbook, The Art of Simple Food, that fuyu persimmons make a good fruit salad, I begged some just picked fuyus from my neighbor and fellow blogger Andrea and set about to make this colorful harvest salad. Persimmons come in two main varieties - fuyu, which are firm and sweet, shaped like a squat pumpkin and can be eaten like an apple, and hachiya, which are acorn shaped and extremely astringent until they are soupy ripe. This persimmon fruit salad is made with the apple-like fuyu variety. To the persimmons I added pomegranate seeds, diced Granny Smith apple, a little lemon juice, mint, and some honey.

Oh, my gosh. This is one of the best fruit salads I’ve ever had, and one of the best things I’ve ever made. So simple too. The mint, lemon, and honey are the only dressing the fruit need.

Ingredients

  • 1package Semi Sweet Chocolate Chips
  • 1 Bottle of Butterscotch Topping
  • 1can Sweetened Condensed Milk

Instructions

This is a very easy Chocolate Fondue Recipe. You can make it right in the microwave with just three ingredients. We recommend serving this recipe in either a small crockpot on the low heat setting or in a fondue pot that uses a candle for heat. Don’t let the butterscotch topping ingredient worry you. The butterscotch flavor disappears when all of the flavors are blended together.

Combine the chocolate chips, bottle of butterscotch topping and 6 tablespoons of sweetened condensed milk in a microwave safe bowl.
Heat on high for 30 seconds.
Stir fondue to a smooth consistency.
You may need a few more seconds of heating time depending on your microwave
Place into a fondue pot or small crockpot.

Ingredients (use vegan versions):

    a bunch of dumpling wrappers (found at Asian food stores)
    1 tablespoon curry paste or curry powder (as much as you like)
    frozen peas (I did 1/2 package)
    chopped onions (I used 1/2 a medium)
    1 large potato (or more if you love them)
    chick peas
    add any veggies you want, soo flexible again
    1 1/2 to 2 cups oil

Directions:

In a big pot boil some water.  Put in the frozen peas, chopped onions, chopped potatoes (smaller the better) and the other veggies you want.

Butternut Squash Apple Cranberry Bake

There are two approaches to holiday cooking - fancy and complicated, and simple and easy. (Guess which camp we’re in?) Here is a colorful, simple harvest bake, with chopped butternut squash, tart apples, and cranberries. The hardest part is cutting up the butternut squash (it’s a workout). But then all you have to do is put everything in a casserole and bake it in the oven for an hour. You can make it a day ahead of time and just heat it up in the oven (while the turkey’s resting) before serving. We loved this, next time we may want to add maybe half a cup of toasted walnuts or pecans. Thanks Heidi H of Carlisle, MA for the recipe!

Ingredients (use vegan versions):

    1 block extra firm tofu or equivalent amount of seitan
    1 onion cubed
    1 clove of garlic
    Hungarian paprika (Pride of Szeged is a good brand, but any high quality paprika will work)
    1 teaspoon black, white, or red pepper, feel free to experiment
    1/4 cup of veggie broth
    vegan sour cream
    whole wheat farfalle, rotini, or eggless noodles
    some vegan margarine for the noodles (optional)
    extra virgin olive oil
    1 green bell pepper (optional)

    1/4 large onion, finely chopped
    1 tablespoon finely chopped garlic
    1 - 14.5 ounce can diced tomatoes
    1 - 15.8 ounce can black-eyed peas, drained
    1 - 15.8 ounce can unsalted corn, drained
    approximately 1/4 cup chopped fresh cilantro or 1/4 jar of salsa with cilantro
    fresh ground black pepper to taste
    crushed red pepper or taco sauce to taste
    3/4 jar salsa, if using fresh cilantro
