Flourless Peanut Butter Banana Chocolate Chip Cookies

Ingredients (use vegan versions):

    1 cup peanut butter (chunky or creamy)
    3/4-1 cup vegan white sugar (adjust to your sweetness preference)
    1 small-medium very ripe banana, mashed or pureed (should have black spots)
    1 teaspoon baking soda
    1/2 teaspoon vanilla
    3/4 cup vegan chocolate chips

Besides being easy, this is SOOO good. Peanut Butter, Banana, Chocolate…how can you go wrong?

Cheesy Bread

My friend Michelle loves to throw big parties, with plenty of food and plenty of friends. I think it must be the large Italian family thing, one is never at a loss for food or great company at her house. One of my favorite dishes that usually makes an appearance at Michelle’s is this “cheesy bread”, a sort of cross between garlic bread and pizza. It’s a great way to help feed a lot of hungry people, and easy to pull together, even at the last minute. Ingredients (use vegan versions):

    1 lb fresh okra
    1 can diced tomatoes
    1 cup vegan "chicken" broth
    2 cloves garlic, sliced thin
    2 leek or shallots, sliced thin
    1/2-1 teaspoon red pepper flakes
    1 Tablespoon Old Bay or other cajun-style seasoning

This baked chicken recipe is one of those recipes that every home cook should have in their repertoire. It uses a minimal amount of ingredients - chicken, olive oil, salt and pepper (and if you want gravy, chicken stock or white wine) and is especially useful on those busy days when you are just too busy to get creative. My mother makes this chicken about once a month and usually serves it with mango chutney and Spanish rice.

Ingredients (use vegan versions):

    4 cups of flour
    2 2/3 cups rolled oats
    2 teaspoons baking soda
    1 1/2 teaspoons salt
    2 teaspoons cinnamon
    1 teaspoon nutmeg
    1 teaspoon ground ginger
    3 1/3 cups sugar
    1 1/3 cups vegetable oil
    4 Tablespoons molasses
    2 cups canned pumpkin
    2 teaspoons vanilla extract
    1 1/2 cups chopped walnuts

Traditional Sugar Cookies

Ingredients (use vegan versions):

    3/4 cup vegan margarine (I use Earth Balance)
    1 cup sugar
    2 Ener-G Egg Replacer "eggs"
    1 teaspoon salt
    1 teaspoon vanilla extract or 1/2 teaspoon lemon extract
    2.5 cups all purpose or pastry flour
    1 teaspoon baking powder

Directions:

Combine margarine and sugar with a fork until creamy/fluffy. Add "eggs" and vanilla or lemon extract. Separately, combine dry ingredients. Blend into wet ingredients 1/2 cup at a time. Cover and chill in the fridge for at least one hour.

Preheat oven to 400F. On a lightly floured surface, roll dough out 1/8 inch thick. Cut into desired s…

Lamb Hamburger Patties

Here’s a lamb hamburger patties recipe I use - not much different to the recipe for beef patties really. These hamburger patties come together in a nice malleable consistency which makes it easy to form patties that stay in one piece and don’t fall to bits.

Ingredients

  • 700g Lamb mince
  • 1 onion
  • 1 egg
  • half cup of breadcrumbs (approx)
  • fresh herbs - basil, coriander or parsley
  • 1Tbsp Fennel seeds
  • 1 tsp paprika
  • salt / pepper to season

Assembly

This isn’t rocket science. Mix everything together in a bowl, except for the breadcrumbs. Adding the egg really moistens up the mixture, and adding the breadcrumbs is how I dry out the mixture again. Add the breadcrumbs until the mixture is somewhat dry, and is easy to shape into patties.

Shape the mixture into approx 8 patties, and grill or fry to cook.

Great with your favorite homemade burger. I find that homemade bread makes all the difference, but I have used a fresh kaiser bun in the photograph which was also pretty good.

White Chocolate Chip Macadamia Nut Cookies

Ingredients (use vegan versions):

    4 1/2 teaspoons Ener-G Egg Replacer powder
    6 tablespoons slightly warm water
    1 cup nondairy butter at room temperature
    3/4 cup sugar
    3/4 cup firmly packed brown sugar (light or dark)
    2 teaspoons vanilla extract
    2 1/4 cups AP flour
    1 teaspoon baking soda
    1 teaspoon salt
    2 cups vegan white chocolate chips
    1 cup chopped macadamia nuts

Moroccan lamb skewers

I have just discovered lamb mince, and it has a few nice advantages over lamb pieces that I hadn’t considered earlier.

This recipe for Moroccan lamb skewers doesn’t require any marinating (which I usually do with all my skewers / kebabs) and threading the meat onto the stick is much less time consuming than regular lamb pieces.

Moroccan lamb skewers recipe

Ingredients

  • 700g lamb mince
  • half a cup of cashew nuts, roughly chopped
  • 1 tsp cumin seeds
  • 1 tsp paprika
  • 1 handfull of fresh chopped coriander
  • Kebab skewers - 6-10 of them depending how big you make them
  • Salt & pepper to season
  • Fresh yoghurt to garnish

Mix it up

Mix everything together in a bowl, except for the yoghurt. Make sure there is a good dash of salt / pepper as these can taste a little bland without good seasoning.

Mix together with your hands, or a wooden spoon. The mix should be sticky enough to hold itself together in little balls.

On the stick

Roll the mince mixture into little sausage sized shapes, and then push a wooden skewer through the middle - much easier than threading individual pieces onto the skewer right?

Place the skewers onto a plate and place in the fridge for about an hour - this helps the meat stay on the stick.

Cooking

Grill, fry or barbecue the skewers until cooked through.
