Aloo Gobi

Aloo Gobi

Ingredients (use vegan versions):

    6 medium red potatoes
    2 cups or so cauliflower florets (1/2 a medium head)
    1 small onion
    2 tablespoons olive oil, soy margarine, or ghee
    1-2 tablespoons curry powder
    1 teaspoon ground coriander seed
    1 tablespoon water
    1 teaspoon whole brown mustard seed
    1/2 teaspoon whole cumin seeds
    2-3 tablespoons lemon juice, or juice of 1 lemon
    3 tablespoons fresh cilantro leaf, chopped
    1 jalapeno pepper, thinly sliced and seeds removed (optional)
    1/2 cup water
    salt to taste

Dad's Fish Stew

My father has been making this soup for several years now. It is incredibly easy to make, given how tasty the results. The key ingredient is the clam juice, though I have prepared it for people with shellfish allergies substituting the clam juice with white wine, fish stock, or water. It works, just not quite as tasty. Works well with white fish, I’ve used cod, tilapia, sole with good results.

Sometimes the best food is really the simplest. We experiment frequently with different ways of preparing pork chops, but the way we have pork chops most regularly is with a simple dry rub and pan frying. My mother’s been making chops this way for years. We use a dry rub of my father’s, which requires some advance preparation (when you make some, you make more than you need than for just a few pork chops). If we are out of the dry rub, mom typically uses a bit of paprika, salt and pepper to season the chops.

Qunioa Sushi with Balsamic-Soaked Tofu and Avocado

Ingredients (use vegan versions):

    1/4 cup quinoa OR 1 cup prepared
    1/4 cup balsamic vinegar
    1 teaspoon dried thyme
    salt and cracked black pepper, to taste (I just did a few shakes of each)
    1/5 block of tofu
    1/4 avocado
    1 sheet nori
    water

Directions:

Cook quinoa as instructed.

Mix balsamic vinegar, thyme, salt, and pepper in a Tupperware or other sealed container. Cut tofu into small strips (like French fries) and place in the marinade. Seal and shake so marinade covers tofu. Let soak while quinoa cooks; flip tofu when quinoa is half-finished. Cut avocado into small sl…

Jolly Green Giant Roll

Ingredients (use vegan versions):

    1/4 cup sushi rice, dry OR 1 cup prepared
    1 sheet nori
    2-3 string green beans, raw
    1/4 avocado
    1/2 tablespoon rice vinegar
    water + small amount extra rice vinegar

Directions:

Cook sushi rice as instructed. Slice avocado into thin slices. The green beans don’t have to be cut, but you can do so if you wish.

Stir 1/2 tablespoon rice vinegar into prepared sushi rice. Shape into a ball, then spread over nori. Lay avocado slices and green beans in a row. Roll and seal by dipping fingers in water/rice vinegar combo and pressing closed; dampen entire roll for easier cutting. Sl…
