Carrot Stuffed Indian Bread

Ingredients (use vegan versions):

    3-4 carrots, peeled n grated
    5 tablespoons oil
    onion 1 small chopped
    1 teaspoon ginger grated
    1 teaspoon mustard seeds
    2 teaspoons cumin seeds
    3 tablespoon finely chopped each coriander leaves, fenugreek leaves and spinach leaves
    salt as required
    1-2 green chillies, chopped
    1 pinch asafetida, optional
    2 cups whole wheat flour
    water to knead
    1 teaspoon curry powder
    1 tablespoon grated coconut

Thai Lime Tofu and Red Pepper Stir Fry

Ingredients (use vegan versions):

    oil, for frying
    1/2 block extra firm tofu
    2 cloves garlic
    a few pinches brown sugar
    2 tablespoon seasoned rice vinegar
    1 small onion
    1 inch piece ginger
    2 tablespoon Thai red curry paste
    1/4-1/2 cup soy milk
    zest and juice of 1 lime
    1/4 cup of nuts (peanuts or cashews would be nice here)
    cilantro for garnish

Slice tofu into small strips and marinate in the rice vinegar, brown sugar and 1 tablespoon of curry paste. Next, fry the tofu until crispy. Then add the chopped onion, and minced garlic and ginger. After a few minutes …

Fruit Sushi

Fruit Sushi

Ingredients (use vegan versions):

    nori
    sushi rice
    water
    fresh fruit, julienned
    mint (fresh or dried)
    agave nectar
    chili powder

Directions:

Cook sushi rice (flat rice) as directed (a bamboo-infused version is wonderful in this recipe).  Let cool until just about the temperature of your hand.  Add 1 teaspoon agave nector for every 1/2 cup uncooked rice.  Add mint and chili powder to taste and mix well.

Put nori, smooth side down, on a bamboo mat or very flexible cutting board.  The edge of the nori must line up with the edge of the mat.  Spread about 1/4-1/3 cup cooked rice on the bottom 1/3 of the nori sheet….

Ingredients (use vegan versions):

    1 - 2 teaspoon veg oil (I use peanut)
    1/2 - 1 teaspoon chopped or grated fresh ginger, or to taste
    1 - 2 cloves chopped garlic
    1/8 - 1/2 teaspoon red pepper flakes or 1/2 - 1 1/2 teaspoon thai sweet chili sauce (my preference)
    1 - 1 1/2 cup textured vegetable protein, reconstituted with an equal amount of boiling water or chicken flavor broth
    1 small to medium onion, chopped
    1/4 - 1/3 cup diced red pepper
    1 Asian eggplant, cut up (optional)
    1/2 lb., soft, medium or firm tofu, according to preference (I like soft)
    1 - 2 tablespoons tamari or Braggs Liquid Aminos
    1/2 - 3/4 cup water

This is the latest one my mother put together; my father has made her make it several times since, and my brothers have devoured it with raves for mom. Grits with Corn and Onion Greens

Grits with Corn and Onion Greens

A dear friend of mine from Alabama called me recently and demanded to know, “why aren’t there any grits on your site?!” Uh, because I’m not Southern and I don’t know what the heck I’m talking about when it comes to grits and I can’t even try to fake it with our readers? Well, not knowing what we are doing has never stopped us in the past, and my dear ole dad found a recipe for grits he couldn’t pass up. This was so good I made him make it twice. What I have learned in researching grits is that people who grew up eating them are passionate about how they like them - white corn, hominy grits, with syrup for breakfast, etc. So, if you have a particular way that you like your grits, please let us know about it in the comments.

By the way, according to NBC, Michael Phelps eats grits for breakfast, along with several fried egg sandwiches, an omelet, three slices of French toast, and a stack of chocolate chip pancakes. Breakfast of champions.
