Pumpkin Cake Chocolate Chip Cookies

Ingredients (use vegan versions):

    1 cup pumpkin puree (or caned pumpkin)
    1 cup vegan sugar (organic evaporated cane juice)
    1/2 cup olive oil
    1 teaspoon vanilla (I like to use 1.5 tsp)
    substitute for 1 egg (I use 1 tablespoon flax seed oil + 3 tablespoons H2O)
    2 cups flour
    1/2 teaspoon salt
    1 teaspoon baking soda
    2 teaspoon baking powder
    1 1/2 teaspoon cinnamon
    1 cup chocolate chips
    (optional 1/2 teaspoon nutmeg)

Directions:

Preheat oven to 350 degrees Fahrenheit.

Game Day Football Cookies

Ingredients (use vegan versions):

    3/4 cup brown sugar
    3/4 cup vegan margarine (I used Earth Balance buttery sticks)
    1/2 cup peanut butter
    2 teaspoons vanilla extract
    2 cups all purpose flour
    1 cup dark chocolate candy melts

Directions:

Cream softened margarine, sugar, peanut butter, and vanilla extract. Add the flour until well combined into a stiff dough. Roll into balls and shape into footballs by tapering the ends a bit. Place onto parchment lined or non-stick cookie sheet. Bake at 325 degrees Fahrenheit for 12-15 minutes or until bottoms are deep golden. Let cool before dipping.

Soyrizo and Rice Stuffed Peppers

Ingredients (use vegan versions):

    4 bell peppers (I use green because I dislike the sweetness of the other colors)
    1 cup cooked rice
    1 package vegan chorizo (I like Soyrizo brand)
    1/4 onion
    2 cloves garlic
    1 vegetable bouillon cube
    any veggies you'd like to layer in the peppers (I don't know of many, suggestions welcome!)

Directions:

-Preheat oven to 350 degress Fahrenheit.

Irish Nachos

Ingredients (use vegan versions):

    5 white potatoes
    1 cup vegan mayonnaise (I use Vegenaise)
    2 tablespoons apple cider vinegar
    1/2 cup soy milk (plain or vanilla)
    1 teaspoon garlic salt
    1 teaspoon pepper
    1 small tomato
    1 jalapeno
    vegan cheddar cheese (optional)

Directions:

Potatoes:

- Dice the potatoes into little wedges
- Either boil or fry potatoes. If you want to boil them let them sit out until they cool and if you fry them just wait til they get soft.
- Put them on a plate and dice up tomato and jalapeno really small and scatter them over potatoes.

Ingredients (use vegan versions):

    2-1/4 cup flour
    1 teaspoon salt
    1 teaspoon baking soda
    1 cup vegan margarine*
    3/4 cup brown sugar**
    3/4 cup sugar***
    1 teaspoon vanilla
    Egg replacer equivalent of 2 eggs ****
    12 oz. vegan semi-sweet chocolate chips *****

Ingredients (use vegan versions):

    1/2 cup unsweetened applesauce
    1/2 cup vegan margarine, softened
    1 cup packed brown sugar
    3/4 cup sugar
    1 cup peanut butter
    egg replacer equal to 2 eggs
    1 1/2 cup flour
    2 teaspoons baking soda
    1 teaspoon salt
    2 teaspoons vanilla
    1 1/4 cup oatmeal

Directions:

Preheat oven to 350 degrees Fahrenheit.

Ingredients (use vegan versions):

    1/2 cup chopped cabbage
    1/2 cup chopped carrots
    1/2 cup chopped radish
    1/2 cup chopped Snake gourd
    1/2 cup Chopped Ridged gourd
