Picadillo Con Arroz y Frijoles (Picadillo with Rice and Beans)

Ingredients (use vegan versions):

    Picadillo:
    1/2 carrot
    1/2 celery
    1 piece of garlic
    1 small onion
    1/2 red bell pepper
    olive oil
    2 cups vegan ?meat? chunks
    1 cup water
    3/4 cup tomato sauce (with pieces of tomatoes is really good)
    1 tablespoon dried parsley
    fresh oregano, minced, to taste
    1 teaspoon nutmeg
    1 teaspoon cinnamon
    1 teaspoon cumin
    salt, to taste
    pepper, to taste

    Beans:
    vegetable oil
    1 piece garlic
    1/4 cup chopped carrot
    1/4 cup  chopped celery

Protein Packed Bean Tacos

Ingredients (use vegan versions):

    1 - 14 ounce can kidney beans
    1 - 1 ounce packet vegan taco seasoning
    1/2 yellow onion, chopped finely
    1/2 red pepper, chopped finely
    1/3 cup firm tofu
    4  taco shells
    1/2 cup vegan cheddar cheese (optional)
    1/2 cup chopped tomato (optional)
    1/2 cup grated lettuce (optional)
    Other favorite taco toppings

Directions:

1) Lightly grease a large frying pan and fry onion and red pepper on medium heat until just browned. Add kidney beans and mash into a paste with potato masher or a fork. Stir often. Crumble tofu and add to pan.

    1 small mild/sweet yellow onion
    1/4 cup olive oil or vegan butter
    1 teaspoon sugar
    1/2 teaspoon salt
    1 1/2 cups dry lentils (I used green; red would be good too)

    1 egg equivalent, prepared (I whisk together 1-1/2 teaspoons Ener-G Egg Replacer and 2 tablespoons water until fluffy)

Ingredients (use vegan versions):

    cooking spray
    1/2 cup vegan margarine (I use Earth Balance)
    6 tablespoons brown sugar
    1 egg equivalent, not prepared with liquid (I use 1-1/2 teaspoons Ener-g Egg Replacer)
    1/2 teaspoon vanilla
    1 cup-2 tablespoons all-purpose flour
    6 tablespoons white sugar
    1/2 teaspoon baking soda
    1/2 teaspoon sea salt

Peppery Garlic Prawns

My friends are so very patient with me. BFF Steve-Anna first emailed me this spicy, peppery shrimp recipe, a favorite of hers, four years ago. And then again, at least two or three more times, when I declared I couldn’t find it, and would she please-pretty-please send it again. Hey Stevie, we finally made it! Just in time for Lent. Dang, what took us so long? Love the shrimp. It certainly packs a punch though, with all of the black pepper the recipe asks for. Feel free to cut back on the pepper to tone it down a bit. The recipe also calls for a tablespoon of brandy. This I think is an essential ingredient for the recipe. (Actually with so few ingredients, they’re all essential.) There is no substitute. If you simply cannot cook with alcohol, add a dab of butter to the olive oil. It will change the flavor of the finished dish, but it should still taste great.

Mexican Style Scrambled Tofu

Ingredients (use vegan versions):

    1 pound extra firm tofu
    1/2 onion, chopped
    1/4 green pepper, chopped
    4 tablespoons freshly chopped cilantro
    1 medium tomato, chopped
    1 tablespoon cumin
    Salt to taste

Directions:

1) Add the onions and green peppers to an oiled pan over medium heat. Add salt and cumin and cover for 2 minutes or until the onions are soft. Crumble the tofu onto the pan and add the tomatoes and cilantro. Cook covered for 5 to 7 minutes or until the tomatoes are soft and juicy.
